Crunchy Sesame Ginger Salad

 
 

No lie, I made this salad every day for a week straight—it’s that good! One of the biggest problems I have with salads is that I never feel satisfied after eating one. I’ll eat a salad for lunch, and an hour later I’m ravenous! The other problem I typically have with salads is that they lack flavor, and the combination of ingredients just doesn’t go well together. There is nothing I hate more than paying a lot of money for disappointing ass salad. I’m happy to say this salad will not leave you disappointed, and is neither boring, or lacking flavor.  It’s satisfyingly crunchy, and just absolutely delicious! The flavors lean Asian or Asian inspired, which is why for this salad I love a sesame ginger dressing.

Tips: I use the organic pre-cooked chicken from Trader Joes, it’s delicious and convenient!

Chicken can be easily substituted for another protein like shrimp or completely omitted all together.

In Season Produce:

  • Sugar snap peas

  • Snow peas

  • Green onion

  • Romaine lettuce

  • Gold nugget manadarin oranges

Ingredients:

  • 1 head of romaine lettuce (washed and chopped)

  • 1 cup of pre-cooked shredded chicken

  • 1/2 cup shredded red cabbage

  • 1/2 cup of shredded carrots

  • 1 small cucumber sliced

  • 1/2 cup snow peas

  • 1/3 cup sugar snap peas

  • 2 green onions sliced

  • 1/4 cup crunchy chow mein noodles

  • 1 tbsp chopped cilantro

  • 1 tbsp sesame seeds

  • 1/3 cup sesame ginger dressing


Directions:

  1. Combine all ingredients together, as much or as little as you like for each

  2. Top with your favorite sesame / ginger dressing
