Non-Dairy Coconut Milk French Toast
Who doesn’t love french toast?! I’m sad to say I haven’t been eating too much of it lately because I rarely buy regular milk anymore so I decided to come up with this non-dairy version utilizing things I actually do have on hand like coconut milk! Now before you non-coconut liking people get turned off, we’re using lite coconut milk in this recipe so the coconut flavor is very subtle, and is masked by the vanilla and cinnamon.
Tips: I suggest using a thick yet soft kind of bread that will hold up after being dipped like challah, brioche, or french bread.

Cook Time: 8-10 minutes
Total Time: 15 minutes

Ingredients:
4-6 slices of bread of choice
1 C. canned lite coconut milk
2 eggs
1 tbsp coconut oil
3 tbsp brown sugar
1 tsp cinnamon
1 tsp vanilla
Directions:
In a large saute pan melt coconut oil on medium heat.
In a shallow flat bowl mix coconut milk, eggs, cinnamon, vanilla, and brown sugar until well combined and slightly frothy.
Dip each piece of bread individually one at a time into egg mixture for only a few seconds making sure each side is evenly coated and gently shake off excess.
Place in saute pan and cook for 2-3 minutes on each side until golden brown and edges are slightly crispy.
Serve warm with toppings of choice!
