Pineapple Ginger Tea

This is a great way to make use of what people consider “scraps” including the skins and core of the pineapple. Not only is this tea delicious, it’s also really good for you! Pineapple is an amazing source of vitamin C and is loaded with antioxidants. It contains a powerful enzyme called bromelain that has anti-inflammatory, anti-viral, and anti-bacterial properties. It helps soothe sore throats and coughing while giving your immune and respiratory systems a boost!

Tips: Be careful not to over boil because the tea can get bitter

You can add pretty much any kind of spice you like to this. Sometimes I add whole turmeric root, allspice, and orange peel.

You can definitely drink this as is once brewed, or for an added level of flavor, steep a ginger tea bag in the liquid.

Prep time: 5 minutes

Cook Time: 30 minutes

Servings: 5-6


Ingredients:

  • The skin and core of 1 large pineapple

  • 6 cups water

  • 1 - 2 cinnamon sticks

  • 1 knob of ginger thinly sliced

  • 1 tbsp whole cloves

  • Sweetener of choice (I use honey)


Directions

  1. Rinse Pineapple. Cut off top and bottom. Remove the pineapple skins, and core and then add to a large sauce pan.

  2. Pour water into sauce pan. Add cinnamon stick, cloves, ginger (and any other additional spices) turn heat on high and bring to a boil.

  3. Once boiled, reduce heat to lowest setting and simmer for 20-30 minutes, or until a golden amber color liquid develops.  

  4. Remove from heat, add your favorite sweetener, let cool slightly, serve warm.
