Caribbean Green Seasoning

Green seasoning is to West Indians, as Sofrito is to Hispanics, as pesto is to Italians. This herby seasoning sauce is a staple in Caribbean cooking, and is a wonderful base for marinades, sauces or “gravies” or pretty much any savory dish that could use an extra kick of seasoning.

Tip: This recipe is easily interchangeable and can be used with a variety of ingredients. It’s great for using up any extra veggies and herbs you have lying around. If you’d like to make it a little spicy, add in a habanero pepper or some ginger. You can also sub cilantro for parsley, or use both!

Some recipes call for adding water or oil, but I find it isn’t necessary because the veggies have enough water and when you blend everything up some liquid will naturally release. I think adding extra liquid or oil would make the mixture too watery.

Cook Time: 5 minutes

Total Time: 10 minutes

Servings: 1 - 8oz jar


Ingredients:

  • 1 green bell pepper

  • 1 red bell pepper

  • 1 bunch of green onions

  • 1 small bunch of thyme

  • 1 small bunch of parsley

  • 1/2 small white or yellow onion

  • 1 whole head of garlic peeled


Directions:

  1. Cut bell pepper into quarters, roughly chop green onion, cut off parsley stems, and remove garlic and onion peel. Then combine all ingredients into a blender or food processor and blend until no large chunks are visible, and the mixture is relatively smooth.
