Healthy Banana Bread
So remember when we were in lock down during the height of the pandemic, and everyone and their mothers was making quarantine banana bread? Well same, and I finally perfected it so you can have a go to recipe should we ever go back into lock down again. Banana bread is one of my all time favorite things to make in life and I make it constantly, and this version is slightly healthier (less sugar), but tastes just as good as regular!
Tips: Use overly ripe bananas with lots of dark spots on them!

Cook time: 60 minutes
Total Time: 70 minutes

Ingredients:
3-4 medium sized bananas mashed
2 eggs
1 ½ cups flour
½ cup sugar in the raw
⅓ cup maple syrup
½ cup coconut oil melted and cooled
1 tsp vanilla extract
1 tsp baking soda
½ tsp salt
½ tsp cinnamon
1 additional banana to place on top for garnish
Directions:
Preheat oven to 350 degrees and grease a 9x5 loaf pan and set aside
In a small bowl mash bananas and set aside.
In a medium sized bowl whisk flour, salt, baking soda, cinnamon.
In a large bowl mix eggs, sugar, maple syrup, coconut oil, vanilla extract, and add mashed up bananas.
Gently fold the dry ingredients into the wet ingredients, until well incorporated. Do not over mix!
Pour batter into the prepared greased pan and spread evenly. Top with thin slices of banana cut lengthwise (optional)
Place in the center rack of the oven and bake for 50 - 60 minutes or until a toothpick comes out with a few moist crumbs.
Remove from oven and let cool on a rack for an additional 15 minutes before removing from pan completely.
