Pomegranate Guacamole
Looking for the perfect guac recipe? Look no further! This is my go to guacamole recipe with the addition of pomegranate seeds which gives it a little something extra. This is one of my favorite things to make when pomegranates are in season because it’s visually stunning and really delicious. I like to serve with plantain or tortilla chips. You really can’t go wrong with this easy and delicious recipe!
Tips: Make sure you’re using ripe avocados, otherwise it will be very difficult to mash them up, impossible really. The best way to tell if an avocado is ripe is to gently press your thumb into the skin, and feel a little give. It shouldn’t be too soft or too hard. You can also tell by the color. Darker skinned avocados are usually riper.

Ingredients:
4 ripe medium sized avocados
Juice of 2 whole limes
¼ cup diced red onions
⅓ cup pomegranate seeds
2 tbsp chopped cilantro
¼ tsp garlic powder or garlic paste
1 tsp kosher salt
1 tsp ground black pepper
1 jalapeno seeded and ribs removed and diced (optional)
1 tbsp olive oil
Directions:
Cut avocados in half lengthwise, remove pits, and scoop out flesh into a medium sized bowl.
Using a fork or masher, mash avocados until desired texture is achieved (I like mine a little chunky).
Fold in red onion, cilantro, pomegranate seeds, seasonings, and jalapeno (optional) and mix to combine.
Top with more pomegranate seeds and cilantro, a drizzle of olive oil and pinch of salt. Serve immediately.
