Healthy Candied "Yams"
The thing I love most about the holidays, besides spending time with family (which can be questionable at times) is the food. Candied yams always remind me of the holidays and in my opinion a non-negotiable side dish. I love the soft, buttery texture of the sweet potatoes and the delicious thick, sticky syrup from they produce when roasted and doused in sugar. But my version is a healthier version, and to be honest you will not know the difference. I’ve had friends try this version and be in actual shock that there’s no refined sugar or butter. These southern style healthy candied yams are honestly insane. If you make them for the holidays I guarantee you will have no leftovers to bring home.
Tips: Please use 100% real maple syrup for this because it truly will not be the same.
If you don’t have coconut aminos, you can leave it out or substitute for soy sauce.

Cook Time: 60 minutes
Total Time: 70 minutes

Ingredients:
4 medium sweet potatoes
¼ cup coconut oil melted
2 Tbsp maple syrup
1 Tbsp honey
1 tsp coconut aminos
1 tsp kosher salt
½ tsp black pepper
Directions:
Preheat oven to 400 degrees
Spray a 9x13 inch pan with avocado oil or olive oil
Wash and scrub skin of the sweet potatoes and let them dry
Slice sweet potatoes into ¼ inch thick rounds
Lay slices in the pan creating two layers
Mix all of the marinade ingredients together and pour evenly over the sweet potatoes
Cover tightly with aluminum foil and place in the oven to cook for 30 minutes.
After 30 minutes remove from the oven, remove foil, and flip the sweet potatoes and baste each one with sauce.
Cover and place back in the oven to bake for another 30 minutes.
Remove from the oven and let cool, serve immediately
