Strawberries & Cream Overnight Oats

Overnight oats are a relatively new thing for me because the first time I tried store bought pre-made overnight oats I wasn’t a big fan. I decided to try making my own, and was pleasantly surprised. Yeah I get it the idea of cold oats might seem a little weird, but they’re actually really good. The oats get nice and soft by soaking them in whatever plant base milk you choose, so come morning they’re basically the same texture as cooked oats. Honestly what really sells it for me is the fact that I don’t have to wake up and make breakfast, they’re perfect for grab-n-go!

Tips: This is another recipe that’s super interchangeable. You can use whatever milk, fruit, and sweeteners you prefer! I liked the idea of strawberries and cream, but you can switch it up with blueberries, peaches, maple syrup, cinnamon, granola, etc, there are really so may options.

Also, you do NOT have to make a layered situation like I did (it was really just for the photos) and can just make the oats alone, I promise they’re still super yummy .

The consistency of the oats will be based on how much milk you add. If you like your oats to be a bit more loose, add 1/4 cup more milk.

Cook time: overnight

Total time: 1 day

Ingredients:

  • 3/4 cup coconut milk (or other plant based milk)

  • 1/2 cup organic rolled oats

  • 2 tbsp coconut condensed milk (or other sweetener)

  • 1/2 tbsp chia seeds

  • 1 tsp vanilla 

  • 1/4 tsp kosher salt

  • 1 cup of diced strawberries (garnish)

  • 1/2 cup of coconut whipped cream (or yogurt)


Directions

  1. Using an empty mason jar combine all ingredients (except for the strawberries and coconut whip or yogurt), put on the lid and shake it up. 

  2. Refrigerate overnight.

  3. Remove from fridge and layer with coconut whip and strawberries (this step is optional).

  4. To garnish, top with strawberries, and enjoy cold or at room temp.
