Watermelon and Feta Salad
This is a really easy and delicious summertime “salad” that is full of fresh vibrant flavors. Summertime is peak watermelon season in California, and I will be the first to admit that I actually was not a big fan of watermelon until I moved here. Local organic watermelon on the west coast just hits DIFFERENT. This salad is a celebration of the beautiful, sweet, juicy star that is watermelon, and all of the other ingredients are supporting actors.
Tips: If you don’t have or like feta cheese you can use another crumbly cheese like goat cheese, or even cotija cheese, or don’t put any cheese at all!
You don’t have to make the vinaigrette (but you probably should because it’s BOMB) and instead can top it with some olive oil, lime juice, and a little salt.

Servings: 2-3
Ingredients:
1 mini watermelon cubed
1 mini cucumber sliced
1/4 cup sliced red onion
1/4 cup feta cheese (or goat cheese)
1 tbsp chopped mint
1 tbsp chopped basil
Vinaigrette:
Juice from 1 lime
¼ cup olive oil
1 tbsp white balsamic vinegar
1 tbsp honey
½ tbsp chopped mint
Pinch of kosher salt
Pinch of ground black pepper
Directions
Combine all salad ingredients in a large bowl and let chill for at least an hour.
Combine all of the ingredients for the vinaigrette into a mason jar, seal tightly with lid, and shake it up, or whisk everything in a small bowl.
Remove from fridge and serve chilled. Top with vinaigrette.
