Vegan Chocolate Ganache

I have a major sweet tooth and yes I am completely guilty of licking the bowl and spoon pretty much every time I make brownies, cookies, or any baked thing even though I know it’s not really good for you. I was inspired to make a healthy and safe version of brownie batter that gives me the same satisfaction as the real thing. This yummy smooth ganache like treat is perfect for dipping fruits, pretzels, your fingers, or whatever your little heart desires! And I intentionally only make a small amount because I will literally not be able to stop myself from devouring all of it.

Tip: Wait until after the chocolate chips are melted to add the other ingredients. I’ve made the mistake of combining everything at once and then microwaving it which resulted in a lumpy chalky texture.


Total Cook Time: 5 minutes

Ingredients:

  • 1/2 cup vegan semi-sweet chocolate chips

  • 1 tbsp coconut milk or coconut cream

  • 1/2 tbsp coconut oil

  • 1 tsp vanilla extract

  • ¼ tsp kosher salt

  • ¼ tsp ground ginger or cinnamon (optional)


Directions

  1. Melt chocolate chips and coconut oil in a microwavable safe bowl in 30-second intervals.

  2. Once melted, stir and add vanilla, coconut milk, salt, and ginger, mix until smooth.

  3. Let sit and cool for a few minutes, as it cools it will thicken into a ganache consistency. 

  4. Serve with fruit or other accompaniments and enjoy!
